Preparation and Mousse Making

  • Softening the gelatin in cold water.
  • Heat a small amount of cream, stir in the softened gelatin until fully dissolved.
  • Melt the white chocolate and combine it with the remaining heavy cream.
  • Fold the dissolved gelatin mixture into the melted chocolate.
  • Gently incorporate pureed strawberries for a delightful flavor.

Freezing and Setting

  • Pour the mousse mixture into silicone dome molds, filling them to the brim.
  • Place in the freezer for several hours until fully set.

Glazing and Decorating

  • Remove the mousse domes from the molds.
  • Prepare a glossy strawberry glaze by blending fresh strawberry puree with sugar and cornstarch, heating until thickened.
  • Pour the glaze over the domes and finish with fresh strawberries or mint leaves.
