Preparation

  • Grate the zucchinis and sprinkle them with salt. Let them sit for 10 minutes to exude moisture.
  • After 10 minutes, use a cheesecloth or clean kitchen towel to squeeze out excess moisture.
  • In a large mixing bowl, combine the drained zucchini, beaten egg, Parmesan cheese, breadcrumbs, minced garlic, chopped parsley, and black pepper. Mix well.
  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Scoop tablespoon-sized portions of the mixture and shape them into small balls. Place them on the baking sheet.

Cooking

  • Bake for 20–25 minutes, or until the bites are golden brown and crispy.
  • Serve hot.

Notes

For lighter options, substitute traditional breadcrumbs with gluten-free or almond flour and use nutritional yeast instead of Parmesan for a dairy-free version. Ensure even spacing on the baking sheet for consistent cooking.
